Five Faves: Delicious Summer Coolers

Today, we’re sharing our Five Fave delicious, healthy drink coolers for you to enjoy in the summer heat (or anytime you need something refreshing!)

We are in the kitchen this week making up batches of yummy drinks to keep us cool. We get extra thirsty in the summer, but grow tired of just drinking water or the same old beverages in our fridge.

Here are some delicious (and totally nutritious!) drink recipes to keep you cool when you’re working or playing hard:

ps: for an added relaxation bonus, add a shot of your favorite liquor to any of these for a yummy cocktail! The peach iced tea is especially delicious with a little spike. Uh, so we’ve heard.

Iced Coffee
Yields 4
This is a large batch iced coffee, which keeps for a few weeks in the fridge. This recipe needs to sit in the fridge for a minimum of 8 hours or up to 24 hours.

Ingredients
4 quarts of water
2 cups of coffee grounds (or 4 coffee grinder cups)
Instructions
Add water and add ground coffee to a large container. Put a lid on the container. Place container in fridge for 24 hours. Remove the container from the fridge after 24 hours. Pour the coffee into large measuring cups. Wash the larger container and pour coffee through a strainer back into the large container.
Notes
If you find that your strainer isn't fine enough add cheese cloth to the strainer.

Honeydew Cucumber Mint Cooler
This is a delicious summery drink that is perfect at the end of a long hot day.

Ingredients
1 honeydew - cubed
1 English cucumber - sliced
1/2 cup of fresh mint leaves + a few extra to float on top of drink.
1/2 cup of fresh lime juice
1/2 lime - sliced
Instructions
Puree honeydew, half the English cucumber and fresh mint leaves in a Vitamix or blender until smooth. Strain through a fine mesh sieve into a large container. Add fresh lime juice, lime slices, and other half of the cucumber to the container, stir. Top off with some additional mint leaves. Chill for 30+ mins or serve over ice. Yum!
Notes
Use a cocktail muddler to help strain the juice from the pulp more quickly.

Earthy Lemonade
Healthy green drink - with no added sugar - perfect for breakfast or a between meal snack

Ingredients
2 - 3 handfuls of Romaine lettuce
1 whole pear - seeds and stem removed, skin on
Juice of 1 whole lemon
1/2 - 3/4 cup of water
Instructions
Add romaine lettuce to Vitamix or blender. Add pear (if you're using a blender cut the pear into smaller pieces). Juice a lemon and add it to the Vitamix or blender and blend!
Notes
Add ice if you want more of a smoothie thickness.

Ginger Peach Iced Tea

Ingredients
3 cups of peaches chopped with pits removed
1/2 cups of sugar
7 tea bags of Earl Grey or other unflavored teas
1 2" piece ginger root
1 lemon - sliced
1 quart of boiling water
Instructions
Peel and mash ginger root and set aside. Add 7 tea bags to a large, heat safe container, along with half the sliced lemon and mashed ginger- pour in boiling water and let brew for 7 or so minutes. Meanwhile, make peach puree with 2/3 of the peaches and half a cup of sugar in Vitamix or blender. Blend. Once ready, remove tea bags from the tea blend and add in 4 cups of ice, stir. Pour in the peach puree and stir. Add the rest of the sliced peaches and lemon. Cool in the refrigerator or add ice to cups before serving and enjoy!

Ingredients
2 handfuls of romaine lettuce
1 handful of frozen pineapple or mango
1 whole banana
1 tbs cacao
1 tbs whey protein powder (or whatever protein powder you like)
1 - 1.5 cups coconut milk
9 ice cubes
Instructions
Add ingredients to Vitamix or blender. Blend. Enjoy!
